You're hungry. It's late. You're in Las Vegas. What could be better than tacos at a legendary dive? This is cafeteria-style service. Grab a tray, get in line, and tell the cooks what you want. The tacos are tasty, and the quesadillas are filling. Try the Adobada that they slice off a spit (gyro style) - the toppings are really fresh, and this place definitely satisfies the taco craving. There are a few in Las Vegas; we went to the one right across from The Conrad.
